I am wondering what defatted stock is? I assume it's equivalent to a stock cube maybe? I made the meatballs yesterday and didn't put whatever it is in them and they still tasted yummy.

Oh and if the limit on the attck is 2 eggs per day does that include any I put in recipes eg, galette, meatballs?

I don't count the eggs in recipes as part of the max 2 eggs. It is only a strict maximum of 2 if you have cholesterol problems, from what others on the diet have said most people seem to go over 2 eggs a day. Remember, you can always have unlimited egg whites.
