smoke mackerel pate
Skin and flake smoked mackerel fillets (I used a pack from Sainsbury’s). Add a couple of table spoons of natural fat fee yogurt and mash with a fork. Mix in some grated horseradish (available in a jar in supermarkets), a tea spoon of capers, chopped chives and plenty of black pepper. I decorated the pate with hard boiled eggs (2 as I plan to eat this over two days) but the eggs could also have been chopped up and mixed with the pate. It was lush and I hope you enjoy it too.
