Dukan Bread
Dukan Bread
- 2 tablespoons of oat bran
- 1 tablespoon of wheat bran
- 1 egg
- 2 egg whites
- 3 tablespoons of white cheese
- 1/2 pack of yeast
- Salt, spices
Preparation:
- Beat the eggs in a bowl with the white cheese, add the oaks and yeast, mix well.
- Salt and spice to your taste (I put grill spices and basilic for my test, curry for the next one)
- Pour the preparation in an tupperware with the shape of your choice (be careful because the dough will swell, so do not overfill)
- Put in the microwave oven for more or less time depending of the thickness, between 3 and 5 minutes typically, at maximum temperature.
If the bottom is "wet", you can return the dough back and put in the microwave for 1 1/2 minute. Attention to the fingers, is hot!
You can make sandwiches with the thickness you want (in this picture,
bread slices and flat cakes with some curry, made with one one portion of bran. The two top bread slices have been toasted.)!
Variation: Dukan bread with burger look-alike!
- Split the dough in two equal parts and pour into two bowls
- Put them each 4min30 in microwave oven, you're with two hamburger buns!
- Let cool slightly, remove and cut in two the contents of each bowl (it's sliced thin, but it is less stodgy and disgusting, then you can make two burgers like that!).
Variation: Pizza dough based on Dukan bread
- In baking dish in the
microwave (I took a siliconed pizza mold), make the dought as thin as possible (by putting a little less yeast, and a little less dough in
the pan to make two small pizzas instead of one) or it becomes disgusting. - The dough
should be well cooked, 5min in the microwave at maximum
temperature for the first side, turn it over (note the silicone mold is
very hot out of the microwave) and put the 1min30. - Put it then in the oven at 150 ° C, 5min on each side to make it become crisp.

The Dukan bread is allowed in the PP Stage. According to Dr Dukan's book, the ingredients used for the dukan bread are allowed in PP stage.

But how often?
I understand oat bran and wheat bran is allowed, but how often per day? For instance, could one have an oat bran pancake with salmon and and an egg for brekky, a Dukan Pizza for lunch, and a seafood mix with oat bran bread? Is that too much oat bran for a Protein Only day?

Hi, I am in Australia and am wondering if we can have the dairy farmers 99% fat free custard on the dukan diet. It has 76 cal per 100g, protein 3g, 0.9g, carb total 13.8g sugars 11.4g. I know it is a bit high in sugar but as a treat I thought maybe... Cannot find fat free yoghurt on the shelf anywhere? Thanks lovin dukan dianne xx
Moderatrice Hi diannejs, thank you for your question. You are right about the custard i'm afraid, it has too much sugar! I suggest you look in your slimming apartment for our custard recipe if you like custard! If you cannot find fat free yoghurt you can have dairy that is 98% fat free...that should be much easier to find. Enjoy!
In the eastern suburbs of Sydney the only Quark I have found is from Queensland and sold in a small grocery shop - supermarkets don't have it. It has 9.6g fat per 100g (6.2g saturated), 1.4 sugars and98.0mg sodium. Is this Quark suitable for the Dukan diet? Also, I have not been able to find any 0% fat cottage cheese and is cottage cheese like 'fromage frais'? Fromage frais is also unavailableThe low fat cottage cheese contains 2.5g fat per 100g, 5..3g sugar and 126mg sodium - is this OK for the diet? As far as dairy goes there is only O% yoghurt available. I am hoping that the Quark and cottage cheese available will be suitable. Thank you for your support.
Moderatrice Hi limayt, a rule that might help you is that all dairy products under 97-98% fat are ok... you should be able to find yoghurts easily and the low fat cottage cheese sounds fine. Hope this helps you!

Good morning! My question is about the tolerated items. Apart from cornflour ( 1tbsp per day) and fat free cocoa ( up to 2 tsp) what are the other tolerated items, and their amounts? Is there a list? Thank you
Moderatrice Dear maggiea, the list will be soon available in the forum when it will be up (shortly). In the meantime, here's a few: fat free, sugar free fruit yogurts (2 max /day), soy yogurt (plain) (1/day), 30 g of chesse/day less than 7%), 1TS/day of low fat cream (less than 3%), 30ml of wine (for cooking only), 150 ml of soy milk/day, etc ... Just remember you can only have 2 tolerated per day. Enjoy !

Moderatrice Hi adriana on the cruise phase you can have 30g a day of low fat cheese (under 7%) the laughing cow light cheese spread is included in this. Enjoy!
how much soy sauce am I allowed to use as seasoning when making a stir fry?
Moderatrice Dear grandmamarilyn, salty soy sauce can be used up to your needs (just beware of water rentention as it contains some salt) but sweet soy sauce must be limited to 1 tsp a day as a tolerated.
i have been eatig surage/fat free jelly as my sweet fix. is this ok?
